Effect of CSN1S1 G allele on some characteristics of milk produced by Cinisara cows

In bovine milk about 37-40% of total casein is represented by s1-casein. The CSN1S1 G allele is characterised by a less efficient protein synthesis (about 40%) compared with the other known alleles because of the insertion, in the 19th exon, of a Long Interspersed Nuclear Element relict responsible for a reduced mRNA stability. The lower proportion of s1-casein in milk is associated with faster formation, higher firmness and greater resistance to compression of the curd. Growth hormone, a polypeptide encoded by the GH gene, is a member of the somatotropin/prolactin family of hormones, which plays an important role on milk production and metabolism. In bovine, a single nucleotide polymorphism (SNP) in exon 5 changes leucine to valine (CTG to GTG) in the mature GH molecule. Genome-wide detection of copy-number variations in local cattle breeds

The aim of the present study was to identify copy-number variations (CNVs) in Cinisara (CIN) and Modicana (MOD) cattle breeds on the basis of signal intensity (logR ratio) and B allele frequency of each marker, using Illumina’s BovineSNP50K Genotyping BeadChip. The CNVs were detected with the PennCNV and SVS 8.7.0 software and were aggregated into CNV regions (CNVRs). PennCNV identified 487 CNVs in CIN that aggregated into 86 CNVRs, and 424 CNVs in MOD that aggregated into 81 CNVRs. SVS identified a total of 207 CNVs in CIN that aggregated into 39 CNVRs, and 181 CNVs in MOD that aggregated into 41 CNVRs. Bresaola made from Cinisara cattle: effect of muscle type and animal category on physicochemical and sensory traits

The physicochemical characteristics and sensory traits of Cinisara bresaola were investigated, to explore a new commercial opportunity for autochthonous dairy cattle farms. Semimembranosus, Semitendinosus and Biceps brachii muscles, from adult cows (AC) and grazing (GB) or housed (HB) young bulls of Cinisara breed, were processed to made bresaola. Differences due to animal category and muscle type were observed. Bresaola from AC was richer in fat and volatile organic compounds. It is well known that β-lactoglobulin (LGB) and k-casein (CSN3) alleles affect milk cheese making properties. The purpose of this study was to analyse the A and B allele distribution at the LGB and CSN3 loci in Cinisara breed and their influence on milk and cheese making production traits. The Cinisara is a Sicilian breed which, according to DAD-IS database (FAO), consists of about 5,000 individuals and is reared mainly for milk production which is usually transformed into Caciocavallo Palermitano, a typical stretched-curd cheese.
